Default Unwanted wires.

Am looking to remove an electrical door bell. It has a 5amp fuse( now switched off at the fuse box, the fuse doesn't appear to be connected to anything else) . Am i ok to just cut back the old wires, cover with insulating tape, push back into the hole in the wall and plaster over?

You should be OK. Cut and tape each wire individually, so there won't be a possibility of them shorting. And, I would make a note in your fuse box, of what you did, and where you did it. Also make a note next to the 5 Amp fuse on what it was used for.
